Easy Summertime Dinners

At Beaverton Farmer's market we could smell some really good barbecued shredded pork sandwiches. They are easy to make and cook in the crock pot while you are busy doing other things. Just put a pork loin in a crock pot with some sauce like Sweet Baby Rays barbecue sauce and let it cook on high for 6 hours or low for about eight. Shed the meat and serve on buns. You can also make Kalua pig almost this same way. You put liquid smoke and salt on the pork instead of the sauce. The shredded Kalua pork is served just on a plate with macaroni salad. These recipes will make you feel like you are in Hawaii, or at some great outdoor festival.

Another fun summer food is the camping favorite "Foil dinners"! We do these in the oven instead of the fire pit. In a double layer of tin foil place carrots, potatoes, sweet potatoes, onions, green pepper, tomatoes, and catsup, barbecue sauce, salt and pepper etc., and some kind of meat. Bake at 425 degrees for an hour or until done. We did these quickly yesterday by preboiling the harder vegetables and using Costco frozen meatballs that are precooked and just need to warm up. The meatballs tasted great and we didn't have to worry about the meat not cooking well enough.
