One hour bread recipe

Simple One Hour Homemade Bread
5 1/4 cups white bread flour
2-4 Tbs. sugar
1 1/2 tsp. salt
1 1/2 Tbsp.  SAF-instant yeast
(This is a faster yeast that works very quickly)
1 1/2 Tbsp. oil
2 cups warm water (not so hot that it kills the yeast)

1. Mix the dry ingredients, add the oil and water.  Mix for 1 minute and then check the consistency of the dough.  It should be sticky, If it is too dry, add a little more water.

2. Mix for 5 minutes in mixer with dough hook.  Do not add more flour after the dough has finished mixing.

3. Spray kneading surface with cooking spray and turn dough out onto the surface.  Knead dough briefly until it has a smooth even consistency.  This should only take a few turns of the dough to accomplish.

4. Divide the dough into two pieces and make two round or two long loafs, or into smaller rolls.  Place loafs on greased cookie sheets, cover with a large dish towel, and let rise 25 minutes.

5.  While loafs are rising preheat oven to 350 degrees.  When loafs are ready to go into the oven, use a sharp knife sprayed with cooking spray or buttered to slice 1/4 inch deep slashes across the tops of the loafs, or X's on the top of rolls.  Bake for 25 minutes for loafs, or sooner for rolls, until golden brown.
